The majority of farmers keep Holstein cattle. A few have specialized in pure bred with Cecil and Clifford Ketcheson having pure bred Holstein. Later Clifford disposed of his dairy cows and purchased beef cattle. Until 1915 cheese patrons were paid by the pound fbr milk delivered. In 1913 Mr. George Publow, dairy instructor, arrived at the Belleville Cheese Board with a cheese made at the expirimental farm from 500 lb. milk. It showed clearly that a high testing milk did produce more cheese and finally payment was changed to payment on the butter-fat test. Some farmers began making changes in their herds. Harry Tummon and sons have shown an interest in Ayrshire cattle and own a large herd. The Lott brothers and Ralph Sills favoured the Guernsey breed. Both of these breeds produce milk with a higher butter fat content than do the Holstein. About 1953 a dairy herd improvement association (D.H.I.A.) was introduced whereby dairy herds might be tested in a way similar to the R.O.P. testing which was restricted to pure bred cattle only. By this method poor testing COWS‘ could be weeded from the herd. Many farmers have taken advantage oi'this and Mr. Brooks Allen, Lonsdale has been the man responsible for the testing in our community. After the pig pens at the Zion Cheese factory ceased to be used as pig pens and were used by the young people of the 8th and 9th concessions for a skating rink. Such good times were had that they decided to form an Athletic Club. They went about this in a very business- like way and each one who joined was given a copy of the Constitution and By-laws of the Bethel and Zion Athletic Club which was in effect January lst, 1921.
